Consultant’s founder, Eric F. Nusbaum is a Certified Hotel Administrator
(CHA) who has been the Food and Beverage Director, Assistant General
Manager, and General Manager of both chain and independent hotels
and has taught Hotel Administration in the United States and Switzerland.
He understands all aspects of hotel operations and offers the following

Facilities
and Energy Management
An historic hotel
was experiencing high energy costs and complaints about their health
club. Wheelwright Consultants provided energy management ideas and
recommendations for health club improvement that resulted in reduced
energy costs and increased guest satisfaction.
Food Service
Management
With extensive
experience in all phases of the food service business, including hotel
operations and catering, Wheelwright Consultants can assist any sort
of food management issue.
Interim
Management
Several of our
clients, hotels and restaurants, have found themselves without appropriate
management. In these cases Wheelwright Consultants has provided an
individual to act as General Manager of the operation.
Quality
Assurance Programs
Multiple clients
have used our services to get a detailed, professional view of the
actual visitor experience that a ‘typical’ guest might
encounter. We have uncovered a wide range of unacceptable employee
behaviors and hotel procedures including improper storage of materials
in fire escapes, unlocked housekeeping closets, as well as documenting
outstanding service efforts. We have similarly detailed experiences
in physical facilities, retail offerings, food quality, hotel services,
and tour providers. We can help develop quality assurance programs
as well as provide trained mystery shoppers.
Sanitation
and Safety Issues
A hotel with multiple
food and beverage outlets was threatened with closure for health code
violations. We assisted the facility in correcting defects and implemented
a routine inspection and reporting program that significantly raised
sanitation standards.
Service
and Staff Issues
A hotel restaurant
had a culture that led to multiple discriminatory practices including
delayed seating and service of minorities. As part of a consent decree
with the Massachusetts Commission Against Discrimination (MCAD), Wheelwright
Consultants provided diversity and cultural sensitivity training.
In the course of preparation we uncovered rampant sexual harassment.
This information was passed on to the management who chose to ignore
our recommendations for changes and training and who were subsequently
named in a sexual harassment complaint.
Wheelwright offers multiple staff training
and development programs on both a preventative and remedial basis.
Eric Nusbaum is on MCAD’s referral list for anti-discrimination
trainers, on the ABCC’s referral list for Responsible Alcohol
Service Trainers, and on many Health Departments referral lists for
food safety and sanitation consultants and trainers.
